DEFINITION

Gum Arabic is dried exudation obtained from the stems and branches of Acacia senegal. (L) Willenow (Famleguminosae). It consists mainly of salts of acidie arabinogalactan protein complex, which on hydrolysis yields galactose arabinose, rhamanose, glucuronic acid and 4-methoxy glucuronic acid.

FUNCTIONAL USES The article of commerce is further specified as to Viscosity, Emulsifier, Stabilizer, Thickening and Encapsulating agent.

A-Solubility

One gram dissolves in two mls of water forming a solution which flows readily and is acid to litmus insoluble in ethanol. Passes test.
B-Hydrolysis Products Not more than 15% (105oC, 5hrs.) for granular and not more than 10% (105oC, 4hrs.) spray dried material.
